Re-creating a Roman Feast

On Tuesday, December 11, archaeologist and food writer Farrell Monaco will be here for a talk and feast exploring ancient Roman cuisine. Monaco is the author of a celebrated food blog, Tavola Mediterranea, in which she explores recipes from across the Mediterranean and even re-creates recipes from the archaeological record.

In what has become a tradition for the Adult Programs team whenever we have a program about food, we tried our hand at making a few of the recipes featured in Tavola Mediterranea. You can find our other cooking attempts here, here, here, and here.

When scrolling through the blog, the Libum caught my eye. I think because of a distant memory about the sweet bread that the Romans ate, from my days learning Latin. I also thought that the idea of an ancient cheesecake drizzled with honey couldn’t be that bad, even with my amateur baking skills.

The ingredients list could not have been easier to assemble. The base for the bread was only three things: eggs, flour, and ricotta. I had Great British Bake Off in the background, so I was reminded to let it proof and not knead it into a stiff mass.

While the dough was resting, I arranged the bay leaves on the bottom of the pans so that the bread would sit on them and soak up all the delicious, savory flavor.

I split the dough between two pans as the recipe says, and it’s a good thing Farrell specified that, because the baking time is already an hour—I would’ve been up very late if all that dough was baked in one loaf! The fun part was decorating the tops with pine nuts.

The finished product was very nicely browned loaves of dense cake/bread. I drizzled them with honey and then used some for dipping. I would recommend keeping a lot of honey on the side when eating this. I thought that the bay leaves were going to give it a little more flavor, but overall the taste of the bread is very neutral.

What I learned: If I were part of an ancient civilization, I would have worshiped honey because it makes even the simplest of breads sugary and delectable.

From the moment I saw Vatia’s Fig-Stuffed Pastry Piglets, I knew I had to make them. While not directly drawn from an ancient source, this dish is not too far off from something that the Romans would have eaten, and the combination of ingredients sounded tasty.

I started by making a dough from whole wheat flour, olive oil, and water. While the dough rested in the fridge, I sliced two portions of pork tenderloin, pounded them with a meat mallet until they were very thin, and seasoned them.

Next I combined dried figs with salt, pepper, and honey in a food processor, spread the mixture on the pork pieces, and then rolled them up like a couple of Ho Hos®. I rolled out my dough until it was about the thickness of a pie crust and cut pieces large enough to wrap around the pork, as well as some smaller pieces that I fashioned into my piglets’ ears, noses, and tails.

After wrapping each piece of pork in pastry and decorating the piglets, I followed the author’s advice and threw them into the oven without naming them. After about 30 minutes at 400 degrees, the piglets came out sadly missing their tails, but otherwise adorable and surprisingly yummy!

What I learned: Meat wrapped in pastry dough has always been delicious, and cooking is even more fun when you combine it with sculpture.

I decided to make Apicius’ Tiropatina (Tiropatinam), which is an egg custard, because it only had three ingredients (six if you count the garnishes), and because I was curious about what flavor and texture you would get in a custard from just eggs, milk, and honey (instead of sugar).

You would think three ingredients would make this a simple recipe, but it was VERY time consuming—literally a two-day process (so if patience is not a virtue of yours, I wouldn’t recommend this recipe).

Once the three ingredients were combined, there was a lot of custard mixture—A LOT. There was no way the mixture I had would only make 18 small custards like the recipe said. If you want to make that amount, I would recommend at least halving this recipe. The one step I added is that I strained my custard mixture before putting it in the tins. I do this for any custard or curd that I make, and I feel that it’s important in order to get a smooth texture.

I didn’t have a pudding tin and my muffin pans were too large to put in a water bath, so I decided to use my mini cheesecake pan. I didn’t take into account how watery this mixture is compared to a cake batter so, as you can see, during the baking process a few of my custards seeped out of the pan.

I often find egg custards too “eggy” for my taste, but these custards actually had a light flavor that I found appealing. I attribute that to the honey. I also enjoyed the black pepper on top—clearly those Romans knew what they were doing.

What I learned: A water bath is essential for baking custards. Since I had so much extra batter, I decided to make a batch of custards in a muffin tin but without a water bath and the result was  horrible.

Farewell to Florals

For the past several months, the Rachofsky Quadrant Gallery on the Museum’s first level has been occupied by seven large paintings spanning half the gallery, nearly floor to ceiling. Installed on a lilac-colored wall, the framed canvases contain figures posed with flowers, rendered in eye-catching pastel hues, and surrounded by alternating sections of black and gold leaf.

These paintings are Edward Steichen’s In Exaltation of Flowers, a commissioned series that the artist completed in 1914 for the home of New York financier Eugene Meyer and his wife, Agnes. Never installed in the space for which they were created, the majority of the panels were kept in storage for the past century. Last summer, the DMA’s conservation team unrolled the canvases, stretched and framed them, and completed conservation treatment so the series could go on tour. Newly conserved and reunited in one exhibition, In Exaltation of Flowers is a time capsule of Edward Steichen’s life and the lives of his close friends on the eve of World War I.

On Thursday, April 26, from 6:00 to 8:00 p.m., we will say goodbye to In Exaltation of Flowers with a soiree that will include a complimentary reception with drinks and small bites inspired by the paintings, a tour about flower symbolism with Dallas Arboretum VP of Gardens Dave Forehand, and a talk by art historian Dr. Jessica Murphy.

Edward Steichen was an avid gardener who exhibited his celebrated delphiniums in New York’s Museum of Modern Art. For Steichen and much of society at this time, flowers were more than just beautiful objects; they took on human character traits and the giving or receiving of flowers served as a kind of subtle language. Each of the sitters for In Exaltation of Flowers is paired with specific flowers that relate to their personalities or the nicknames given to them within their friend group. Join Dave Forehand of the Dallas Arboretum for a tour of In Exaltation of Flowers focusing on the types of flowers Steichen included in his paintings and what they might have communicated to a viewer in 1914.

In Exaltation of Flowers captures a very particular moment in Edward Steichen’s career, in the history of art, and in the lives of a circle of friends on the eve of the World War I. A very personal project for the artist, the murals include portraits of close friends, either painted from life or from photographs, alongside flowers inspired by his garden at the French country home where he hosted lively parties. Steichen’s careful portrayal of his subjects reveals the nuances of their personalities and relationships within the social group. Best remembered as a photographer, Steichen had a somewhat rocky relationship with painting and ultimately destroyed much of his painted work. His approach to this series shows a nod toward the Symbolist movement, with its emphasis on flatness, invariable color, and in some sections abandonment of realism. Jessica Murphy, Brooklyn Museum’s Manager of Digital Engagement, will bring to life these and other stories behind Edward Steichen’s murals and the people who inspired them.

Have a PAWsome New Year!

Friday is Chinese New Year and we invite you to start the New Year with us as we celebrate the Year of the Dog during our monthly Late Night. Throughout the night, you can experience lion dances, watch Chinese martial arts demonstrations, have your name written in Chinese calligraphy, and listen to traditional Chinese music in our galleries. There will be dog-themed tours, of course, but you can get a jump-start learning about the dogs in our collection with two previous blog posts here and here.

While dogs take precedence this year, be sure to check out these works of art from China on Level 3 that feature other animals from the Chinese zodiac:

This tomb marker features two of the four “spiritually endowed” directional deities – the tortoise and the dragon. The other two deities are the phoenix and the unicorn. While not one of the animals represented in the Chinese zodiac, the tortoise is important in Chinse Buddhist belief because it symbolized longevity.

Learn more about these heavenly guardians, which often featured lions and tigers on their armor and showed triumph as guardians by balancing on the figure of a bull (or ox), on our 6:30 p.m. spotlight tour with DMA Teaching Specialist Jennifer Sheppard.

The cover of this box features two symmetrically opposed imperial five-clawed dragons chasing the flaming pearl of wisdom.

This horse is a mingqi or “spirit object” that was buried with the deceased in underground tombs. With the accession of the emperors of the Tang dynasty, the number of funerary objects placed in tombs increased, as funerary art became a means to display your wealth publically.

Friday’s Late Night will also feature a talk by DMA curator Dr. Anne Bromberg who will discuss our new installation Asian Textiles: Art and Trade Along the Silk Road which features these two coats from China:

Loving Vincent

Vincent van Gogh is one of the most well known names in art; despite that fact, there is still a veil of mystery surrounding the artist’s life, specifically his final days. This is the purpose of the film Loving Vincent, which will be screened at the DMA this Saturday at 7:00 p.m. for its Texas premiere. Through “the world’s first oil painted feature film,” you can see over 65,000 frames painted by 125 artists to mimic van Gogh’s style. You can watch the trailer here and see just how beautiful an oil painted movie can be. Around 130 frames in the movie are landscapes or portraits copied from actual van Gogh paintings, a few of which have a direct tie-in to two works on paper in the Museum’s collection.

The first is a preliminary drawing for van Gogh’s famous work Café Terrace at Night. This piece is re-created in the film for a scene between the main character, Armand Roulin, and his brother, Joseph Roulin, played by Douglas Booth and Chris O’Dowd. This particular frame mimics van Gogh’s painting, but adds in the two characters to the scene.

The second work from our collection re-created in the film is the etching made by van Gogh after painting Portrait of Doctor Gachet. This was his first and only foray into the artistic technique of etching. The frame from the film shows Doctor Gachet, played by Jerome Flynn, with the same contemplative look and handsome mustache.

The Mondrian Brand

The abstract paintings of Dutch artist Piet Mondrian have become ubiquitous in pop culture, from architecture to designer fashions. In a sense his geometric, primary-colored compositions have become a brand. This proliferation and appropriation of an artistic style begs the question, what shapes an artist’s legacy? Why do some works of art become so intertwined with pop culture that they become icons instantly recognizable to mass audiences? Join us on Thursday, April 27 at 7:00 p.m. for The Mondrian Brand and hear from Dr. Nancy Troy, Victoria and Roger Sant Professor in Art at Stanford University and author of The Afterlife of Piet Mondrian.

To contemplate Mondrian’s pop culture legacy in my own way I thought it was finally time to attempt the complex and beautiful Mondrian Cake made famous by Caitlin Freeman in her book Modern Art Desserts: Recipes for Cakes, Cookies, Confections, and Frozen Treats Based on Iconic Works of Art.

The first three lines of the recipe are just a taste of what goes into this chocolate-soaked masterpiece:
Makes one 16 by 3 by 3-inch cake, serving 15
Hands-on time: 6 hours
From start to finish: 2 days


To begin, I had to make four velvety cakes: one white, one blue, one red, and one yellow. Freeman uses a delicious recipe with a shocking butter content (I made two trips to the store). As you might imagine, I ended up with a rainbow of leftover cake that I was too lazy to repurpose into another dessert.

After precisely cutting each section of the Mondrianesque composition I glued them together with 24 oz of bittersweet chocolate ganache and finished the cake with a shower of ganache. With two days of cake construction behind me I was impatient to see the finished product and did not let it set up in the fridge for the recommended three hours. Each slice revealed a mini Mondrian, if only slightly wonky and Easter-egg colored. We’ll never know if Mondrian would have approved of this culinary counterfeit, but I was certainly satisfied with my effort.

Who Run the (Ancient) World?

In celebration of Women’s History Month, let’s look way back at a few leading ladies from the DMA’s collections who made their mark on the ancient world. Then join DMA curators Dr. Anne Bromberg, Dr. Kimberly L. Jones, and Dr. Roslyn A. Walker on Thursday, March 23 to hear more about Women of the Ancient World and the objects that tell their stories.

The Amazons were fierce group of women warriors who, until recently, were thought to be purely mythological figures. To the ancient Greeks, Amazons were barbarian man-haters and a formidable opponent for any would-be hero. They were an object of disgust for their rejection of traditional feminine roles, but they were also a source of fascination, often portrayed in art as beautiful and brave.

While this work of art was made fairly recently, it honors the founding female ancestor of this Indonesian society who is seen as the ultimate source of fertility. She is rising out of a boat, a symbol for the womb. Her arms are outspread, symbolizing the ancestral trunk of a tree and subsequent generations of branches.

On this lid of this cartonnage, or coffin, we see an elaborately dressed woman and symbols of the deities that would protect her mummy inside. Although her identity is unknown, the quality of the coffin suggests that she was a person of wealth and social status.

The royal woman depicted in this Mayan relief sculpture is Ix K’an Bolon or “Lady Precious Nine.” The text on the panel and the iconography of her ornate clothing tell us she is depicted as a goddess. It is possible that this relief would have been balanced by a second showing her husband in similar dress, shedding light on the power and prestige of ruling women in Maya society.

Preserving Pollock: A Conversation about Art Conservation

I’ll be talking with Jim Coddington, the Chief Conservator at the Museum of Modern Art in New York, this Friday evening, November 20, at 9:00 p.m. about his extensive experience with the work of Jackson Pollock. We’ll be discussing the materials and techniques Pollock used in his paintings, the ways in which those materials have aged and changed over the years, and how conservators approach the preservation challenges that Pollock’s works present.

Jim carried out technical studies and conservation treatment on Echo, and we will be discussing some of the details of that work during our Late Night conversation. Here is a photo of the reverse of Echo during its treatment, with the stretcher removed, which reveals darkening of the canvas where it had been in direct contact with the wood stretcher support:

Austen Abounds

It all started last year when a colleague sent me a link to a portrait we have in our collection of Jane Austen, done by Austen’s sister Cassandra. This colleague knew I was an Austen fan and wanted to see if I was aware that we had this in our collection. I had no idea!

I shared this awesome news with other Austen fans on staff, which led us to think about how great it would be do a Jane Austen-themed Late Night. Around that time, we also heard that the Dallas Theater Center would be doing a spring production of Austen’s Sense and Sensibility. Voilà, an Austen Late Night was born.

We brainstormed a lot of ideas, researched speakers who had talked at local and national meetings of The Jane Austen Society of North America, and met with staff from the Dallas Theater Center to talk about connections to their production.

After months of planning, we are excited to see the event take shape, and we invite you to join us for our Jane Austen Late Night on Friday, March 20, from 6:00 p.m. to midnight. You can hear music from the Romantic era, learn about the fashion world of Jane Austen, watch a Victorian fencing demonstration, listen to a dramatic reading by Dallas Theater Center actors, take quizzes to test your knowledge of all things Austen, watch films, including the 1940 version of Pride and Prejudice staring Laurence Olivier, and learn how Kate Rorick helped modernize Austen for the digital age.

The snow last Thursday didn’t keep us from hosting hairstylist and amateur archaeologist Janet Stephens as part of our Boshell Family Lecture Series on World Art and Archaeology. Stephens began researching ancient hairstyles after being inspired by several Greek and Roman busts at the Walters Art Museum in her native Baltimore.

Stephens recreates these elaborate looks on stage using only what would have been available – double sided combs, bone needles, and wool thread – just like the ancients. Prep work on the models, who braved the winter weather, began only a few hours before we opened the doors to the public. Stephens set a few preliminary styling steps in place, like multiple braids, in order to maximize time on stage.

She brought three classic styles to life on the Horchow stage Thursday evening for The Art of Ancient Hairdressing complete with period inspired costumes for our DMA volunteers.

The editors of the visually compelling book Women in Clothes, Sheila Heti, Heidi Julavits, and Leanne Shapton, will have a spirited conversation about what informs and motivates women in their daily clothing choices and what those fashion choices symbolize and reflect about our lives. Over 600 surveys of women across races, creeds, religions, and ages reveal that there are myriad responses to the question “what does style mean to you?” Fashion designer Lela Rose will share insights into her creative process and how artists have inspired some of her designs.
